I started my culinary career from very humble beginnings working in a hospital Kitchen, inspired by my mother and a great interest in cooking.

I went to Glasgow College of Food and Technology where with the help and encouragement of people like Peter Cushley and Malcolm Fraser I got a good grounding in all aspects of the kitchen and a unique insight into confectionery and sugar craft.

Probably my single biggest achievement was being the overall winner of the Great British Recipe Competition in 1997, a few years ago now.

My time since has been filled working for companies like Gardner Merchant / Sodexho and their international chefs.

There has always been a place for the top end of the market, for the more skilled and complex preparations for that special dining experience. This is why I was delighted to be appointed Executive Chef and Head of Craft Training for Costley and Costley Hoteliers based in
Lochgreen House Hotel (broadband reqired) in Troon. My main focus is to provide the craft training and culinary support required to sustain and further develop the high standards required within the Costley business.

I'm a committed team player, to be successful this is critically important. Being a member of the Scottish Culinary Team and ultimately their mentor has given me immense satisfaction over the years. I now spend much of my time motivating and exciting not only competition chefs but chefs from kitchens all over the country.

This year has seen the inauguration of the Scottish Chefs Conference which I believe will help give Scottish Chefs a voice to address current issues within the Industry and support for their profession into the Future.
