Willies latest venture was to set up the first ever Professional Chefs Conference in Scotland a task that he took on almost single handily.
I know he gets upset when journalists ridicule the quality of cooking in Scotland and he feels the conference will enhance the quality and improve standards throughout.

His objectives were to share knowledge and skills, raise standards throughout Scotland, create a platform to meet suppliers and fellow colleagues and to raise the profile of his profession.

Willie sees the Scottish Chefs Conference Web site as an educational tool for chefs at all levels with each year being archived and easily accessed for reference.

The Inaugural Scottish Chefs Conference was held at Lochgreen House Hotel in Troon, Ayrshire on the 20th November 2006.
