What made you decide to become a chef?
It's a challenging and exciting job where you never stop learning

Who has been your greatest influence and why?
Bruce Sangster and the guys from the Scottish Culinary Team, the high standards make you focus on the taste at hand.

Are you Doing your Dream job?
Always!

Who is the most famouse person you have cooked for?
My Mum.

What has been the highlight of your career?
Winning the great British Recipe in 1997, and of course the 6,000 first prize.

In your opinion, what's the most over used ingredient in catering?
Chicken bouillon.

Which celebrity chef do you love to hate the most?
Love or hate them all they all help to raise the profile of our profession.

What do you think is the best thing about Scotland?
It's natural produce and dedicated growers and producers

Who is your biggest rival?
Scott Lyle from Glenrothes College as he is funnier than me!

Your Idea of Paradise?
Chilling out with Susan and the kids.

Pet Peeve?
Chefs not tasting and seasoning food.

Describe the last gift you received?
A deodorant set from Jamie and Stephanie (I wonder if they were trying to tell me something.)

Name your greatest Phobia?
I have a great fear of blunt knives!

What is your all time favourite film?
True Romance, starring Christian Slater.

What's your poison?
Tea.

What's your Achilles heal?
I probably care too much.

Who would play you in a film of your and why?
Gordon Ramsay as he has plenty of experience in front of the camera and is a great chef.

Are you a dance floor diva or a couch potato?
Depends on how many Budweisers I've had...

Plans for the future?
To continue my contribution to making Costly & Costly Scotland's centre of culinary excellence and the place for aspiring chefs to train.
