Cajun Spiced Salmon
Served on Asian Coleslaw wih Gingered Pak Choi and Oriental Dressing

Ingredients
4 x 200 gms Supremes of skinned and trimmed salmon Fillet
Cajun Seasoning
Salt
30 mls Vegetable oil
30 gms Butter
Method
1. Season the Salmon pieces with salt and Cajun Spice.
2. Heat Pan and add the vegetable oil.
3. Place in the fish and cook on one side, turn and allow to further cook on the other side and add the butter.
4. Baste the Salmon with the Butter to keep moist.
Asian Coleslaw
Ingredients
250g white cabbage, finely shredded
125g carrot, finely grated
60g finely diced red onion
1 apple diced or grated
50g mayonnaise
5g Curry powder
10g Mango Chutney
Juice of 1 lime
4 Tbsp. Fresh coriander, chopped
2 Tbsp. Spring onion, finely sliced
20g Roasted Cashew Nuts
Method:
1. In a ceramic bowl, combine the Mayonnaise, curry powder, mango chutney and lime juice.
2. Mix together the cabbage, carrot, red onion and apple.
3. Fold the Mayonnaise mixture through the vegetables until thoroughly mixed.
4. Finely fold through the Coriander, spring onions and the cashew nuts.
Gingered Pak Choi
Ingredients
200gms Picked and washed Pak Choi
20 gms – 1 inch piece of fresh ginger grated and passed through cloth.
1/2 Lime – Juiced
Little caster sugar
Soya Sauce
Method
1. Mix together the ginger juice, sugar, lime juice and soya sauce.
2. Heat the mixture in a pan and add the Pak Choi and wilt.
Oriental Dressing
Ingredients
50 grm caster sugar
15ml rice wine vinegar or White Wine Vinegar
1 lemon grass stick Chopped
¼ inch ginger
½ chopped chilli
1 tbspn soya sauce
2tbspn tomato Ketchup
----------------------
5grm coriander
1 lime {juice and zest
Method
1. Make a direct caramel with the sugar and add the Chopped Ginger, Chillies and Lemongrass followed by the vinegar.
2. Bring to the boil, and add the soya and ketchup
3. Take off heat and allow the flavours to infuse.
4. Strain when cooled and add the chopped coriander and lime juice.
Using Sweet Chilli Sauce
Ingredients
1 blanched skinned Tomato
Juice of ½ Lime
30mls Sweet Chilli Sauce
1 sprig Coriander chopped.
Method
1. Remove the seeds from the tomato and dice the flesh.
2. Whisk together the Sweet Chilli Sauce, Lime Juice followed by the chopped Coriander to form a dressing.
